All staff are responsible for food service at some capacity. Food safety is very important to prevent foodborne illness/outbreak. Not just dietary staff are responsible for food safety. Residents may request food/snacks while dietary staff are not present, and it is important for all staff to practice proper food safety habits. All foods must be properly labeled, dated and stored. Resident foods provided by family must be labeled with the resident’s name and date of receiving the food item if being stored and not eaten immediately. There is a refrigerator/freezer on each floor designated for resident food storage and no staff food/drink is allowed to be kept in the same refrigerator/freezer. There is also a pantry refrigerator and freezer for facility provided foods only. No staff food/drink is allowed in the “pantry” refrigerators or freezers.
Soon the IDDSI diet texture modification will be used as standard practice. Some food and beverage products used in our facility are already labeled with the IDDSI symbols.
